Almond Milk Biscuits
I was in the mood for biscuits after making a corn chowder soup ( leave a comment if you want that recipe). I wanted an easy recipe with simple ingredients and not milk because I only use nut and oat milk. So I started with a basic biscuit recipe and altered it a bit to make my own Almond Milk Biscuits and let me say they came out delicious.
Here is the recipe.
2 cups all purpose flour
1 Tbsp baking powder
1 Tsp salt
1/2 cup (1 stick) unsalted butter cold cubbed
3/4 cup almond milk
Preheat the oven to 450 degrees F. In a large mixing bowl combine flour, baking powder, and salt. Add in cubbed cold butter with a fork or hand mixer with dough attachments and mix until crumbly. Pour in milk while mixing until the dough is soft and pulls away from the side into a ball. Turn dough onto a floured surface and sprinkle with flour to prevent sticking. Roll dough to 1/2 inch thick sheet. Cut with round cookie cutter. Re-roll dough to cut more. Place biscuits on a baking sheet with parchment paper, brush tops with almond milk and bake until light golden brown on top. About 10 minutes. Serve warm.
