{Recipe} Lemon Ricotta Cake

I made this simple but delicious lemon ricotta cake because I had ricotta that I didn't want to go to waste. It is so delicate and light but bursting with lemony flavor. It looks extravagant to bring out as a Summer dessert when you add berries and mint leaves.
